Lunch prep for the week

don't know about you, but I am not a morning person.  It really doesn't matter how early I go to bed, or how much sleep I've had, mornings are still always tough. Especially now that it's not just me trying to scoot out the door.  There's a puppy that needs to be walked, fed, and given attention.

One of the things that suffers for me, is having the time left to pack a lunch.  When I don't pack a lunch I end up grabbing something quick and unhealthy on my short lunch break.  Not only is it unhealthy, but I also end up spending more than I would have if I had just packed a lunch.

Every week when I grocery shop I'm good about picking out fresh produce and healthy snacks. But I'm just as guilty at throwing them out at the end of the week, untouched and limp.  I can't stand what a waste it is!

The best way I've found to solve this problem is to prep my healthy choices at the beginning of the week.  I usually make a veggie and a fruit choice and have them all ready to go in the fridge.
This week I have my five containers of red, yellow, and green peppers with carrots ready to go.  How colorful are they!  I grab a side of hummus and I have a healthy, and delicious snack for the day.

I also try to have a fruit option ready for the week.  This week watermelon and raspberries were on sale, so I stuck to the color theme.
I pack everything up in one of the crisper drawers, and each morning I just grab a fruit, and veggie container and I'm halfway done!
For the rest of my lunch I tend to vary between making a sandwich the night before or packing leftovers from dinner.  This has made life so much easier, and now I don't have to worry about leaving time in the morning.  And since I rarely leave the I don't have to worry about spending the extra money for an unhealthy meal that I end up eating on the run.

A week of happy

 I recently celebrated my 28th birthday.  After finishing off such an incredibly busy, hectic and eventful year, I was happy to say goodbye and cheers to a new year.  Ideally it will be a little less hectic, but one never knows!

As I start the year off, I jumped on the 100 days of happy bandwagon.  I have a huge number of friends who have been participating in this trend throughout the last few months.  The gist is basically to post a picture of something small that made you happy, for 100 days.  What better way to start off my 28th year by appreciating all the small, and big, things?  Even when I'm having a rough day, recognizing something small that made me happy can turn things around.  Here are the things that made me happy this first week:
The Hubs taking me out on a fun birthday "progressive" dinner. Yum!

This guy...I just can't 
Frozen yougurt treat!
Perfectly cooked...and I didn't have to do the cooking!
Puppy kisses, he can be so sweet...sometimes!
Night out with friends, so glad we've stayed in touch!
Seeing my new name, and new degree recognized in print, doesn't get better than that!
